Redbreast 12 Years

The Readbreast 12 from the Midleton distillery in County Cork in Ireland is a single pot still. This means that not only malted but also a proportion of unmalted barley is used in the mash. Malting barley produces enzymes that enable the yeast cultures to convert sugar into alcohol.Like all the other whiskeys in the Redbreast series, the 12 years was also triple distilled in copper stills. The Single Pot Still was matured in Spanish sherry casks and American bourbon barrels.

Tasting

Nose

After a very fruity-mild opening, spicy-rich aromas push to the fore. Ripe pears and semolina pudding with marzipan can be noticed in the Redbreast. The sherry influence is embodied by freshly baked plum cake with crumble.

Palate

The 12 years comes across as soft as butter. Still spicy and fruity, a slight note of fruit wine resonates. Roasted aromas and dried berries are clearly to be found in the background. In the middle part there are cereal notes, which in combination with the dried berries make us think of crunchy muesli.

Finish

Long-lasting, intense with strong oak spice on the palate, the Irish whiskey lingers.

Balanced and well-structured, the Redbreast 12 impresses with a harmonious blend of sherry and bourbon cask influences, along with a distinct oak spiciness in the finish. A technically precise Single Pot Still that scores especially with its layered aromas and smooth texture.
