"Dingle. Hand-made character. Unique Whiskey." - This is the slogan under which the still small distillery has been producing its whiskey by hand since 2012. Distillery young, whiskey young. Can that work?Dingle Single Malt Irish Whiskey from 2021 is mainly a 6-7 years spirit matured in first-fill bourbon casks and PX sherry casks and first bottling. Dingle is one of the few Irish distilleries that exclusively produce their own spirit.

Tasting

Nose

We have a heavy-smelling, deep honey-coloured single malt in the glass, which begins with an aniseed smell and transitions into a sweet citrus note. After the heavy notes fade away, softer notes take over, such as peach, ripe pear and creamy caramel.

Palate

Very strong, the palate is startled by a strongly acidic note. Again, softer flavours like sugar syrup, baked apple with vanilla sauce and candy floss take over after the initial tightening. Bitterness can be tasted briefly in between. We think of baking cocoa here.

Finish

The finish is rather short, partly spicy-minty and reminds us strongly of forest honey and spruce forest.

A whisky that invites you to dream with its sweet and soft aromas – perfect for relaxed late summer evenings. You can sense the youthful notes of the distillery, but that’s exactly what makes the Dingle so charming and lively. The more you enjoy it, the more it reveals its character – a genuine pleasure to drink for those who don’t take it too seriously.

The balance between heavy, sour, and sweet notes is quite successful here, even though the brief spiciness and bitterness somewhat fragment the finish. The structure feels young and vibrant, which is typical for a first release matured in first-fill bourbon and PX sherry casks. For connoisseurs looking for a craftily solid composition with potential for development, this Irish single malt is an interesting choice.
